Wine making
Grapes are destemmed and crushed. The must is separated from the skins, through soft pressing. Crushing is a decisive element to keep product freshness and aroma. For the production of Pignoletto Sparkling Wine, specifically, only the noblest parts of the most, obtained at the beginning of pressing, are used. After static cold decantation, most alcoholic fermentation is commenced at a controlled temperature of 15/16° C.
Sparkling wine production process
“Prise de mousse” in autoclave for 40 days with a maximum pressure of 2,5 Atm.

Organoleptic properties
Pleasurably sparkling, crystal-clear, straw yellow with greenish reflections and delicate and fruity perfume. Fresh, dry, well-structure, medium softness, it has a slight and pleasurable bitter aftertaste.
